Ingredients

  • tablespoons butter cut into small pieces
  • 0.3 cup carrots diced
  • teaspoon thyme sprigs fresh chopped
  • cup peas green frozen thawed
  • 0.8 cup rice long-grain uncooked
  • 0.5 teaspoon salt 
  • 0.3 cup shallots minced
  • 1.5 cups water hot

Directions

  1. Heat a medium saucepan over medium-high heat. Coat pan with cooking spray.
  2. Add shallots to pan; saut for 1 minute or until tender.
  3. Add carrot; saut 1 minute. Stir in rice; saut 2 minutes.
  4. Add 1 1/2 cups hot water, thyme, and salt; bring to a boil. Cover, reduce heat, and simmer for 23 minutes or until rice is tender and liquid is absorbed.
  5. Remove from heat; stir in peas and Shrimp Butter.
  6. Let stand for 5 minutes or until peas are thoroughly heated and Shrimp Butter melts.
