  • 0.3 teaspoon pepper black
  • teaspoons capers 
  • cup carrots chopped
  • 0.5 cup less-sodium chicken broth fat-free
  • 0.3 cup chives fresh minced
  •  garlic cloves minced
  • tablespoons juice of lemon fresh
  • 1.5 teaspoons lemon rind grated
  • 1.5 cups mushrooms chopped
  • tablespoon olive oil 
  • 0.5 cup onion chopped
  • 0.5 cup bottled roasted bell peppers red chopped
  • 0.5 teaspoon salt 
  • 1.5 pounds shrimp deveined peeled

Directions

  1. Cook rice according to package directions, omitting salt and fat.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add onion; saut 3 minutes.
  4. Add carrot and garlic; saut 3 minutes.
  5. Add mushrooms; saut 3 minutes. Stir in bell pepper, broth, salt, pepper, and shrimp. Cover, reduce heat to medium, and cook 3 minutes or until shrimp are done. Stir in rice, chives, and remaining ingredients. Cook 3 minutes or until thoroughly heated, stirring constantly.
