  • medium apples peeled cut into 1/2-inch pieces
  •  bay leaves 
  • 12 ounces beer 
  • pounds pork shoulder boneless cut in 1 1/2-inch bits
  • tablespoons brown sugar 
  • medium carrots diced
  • cups chicken broth (bouillon)
  • servings extra wide egg noodles cooked
  • tablespoons garlic finely minced
  • tablespoons olive oil 
  • medium onion diced
  • servings salt and pepper 
  • cup tomatoes fresh diced canned

Directions

  1. Season the pork with saltand pepper.
  2. Heat 4 tablespoonsoil in a heavy casserole overmedium-high heat. Brownthe pork well in batches.
  3. Remove to a bowl.
  4. Wipe casserole clean andheat the remaining oil overlow heat.
  5. Add onions, carrots,and apples. Stir until softened,10 minutes, adding the garlicin the last 3 minutes. Stir inremaining ingredients exceptnoodles. Return pork and anyjuices to the casserole.
  6. Bring to a boil. Reduceheat and simmer, partiallycovered, stirring, until themeat is very tender, about 1 1/2hours. Discard bay leaf; adjustseasonings.
  7. Serve over eggnoodles in shallow bowls.
