Ingredients

  • ounces bittersweet chocolate 60% chopped (no more than cacao)
  • tablespoon brandy 
  • large eggs separated
  • cup cup heavy whipping cream very cold
  • 0.1 teaspoon salt 
  • 0.8 stick butter unsalted cut into 6 pieces

Directions

  1. Melt chocolate and butter in a large metal bowl set over a saucepan of barely simmering water, gently stirring occasionally until smooth.
  2. Remove from heat.
