Ingredients

  • 0.3 cup carrots chopped
  • 0.5 cup celery coarsely chopped
  • ounces the following: parmesan rind) dried
  • cup wine dry red
  •  flat parsley 
  •  garlic clove whole halved
  • 1.5 cups onion red coarsely chopped
  •  sage 
  • 0.5 cup shallots chopped
  •  thyme sprigs 
  • cups water divided

Directions

  1. Combine mushrooms and 2 cups water in a bowl; cover and let stand 20 minutes.
  2. Drain mushrooms in a colander over a bowl, reserving liquid. Rinse mushrooms.
  3. Place in a 3-quart saucepan; strain reserved liquid into the pan.
  4. Add 3 cups water, red onion, and remaining ingredients.
  5. Bring to a boil over medium heat; reduce heat, and simmer, partially covered, 1 hour. Strain.
