Ingredients

  • 2.8 pound frangelico 
  • large garlic clove pressed
  • 1.5 cups cup heavy whipping cream 
  • tablespoon kosher salt 
  • tablespoons olive oil 
  • tablespoon sugar 
  • tablespoon wasabi paste prepared

Directions

  1. Make Wasabi-Garlic Cream
  2. Combine cream and garlic in saucepan and cook over medium-high heat until reduced to 1 cup, stirring frequently, about 15 minutes.
  3. Whisk in wasabi and cook for 1 minute, remove from heat. Season to taste with salt.
  4. Make Tenderloin
  5. Coat beef with olive oil.
  6. mix sugar and salt together. Rub this mixture over top and sides(not bottom) of beef.
  7. Place on rimmed baking sheet and place in preheated oven. Be sure bottom is not rubbed.
  8. Roast until thermometer inserted into center registers 120°F for rare.
  9. Remove from oven; let rest 10 minutes.
  10. Sprinkle with salt and pepper.
  11. Remove strings. Reheat sauce over medium heat.
  12. Cut beef into thick slices; serve with sauce.
