Ingredients

  • 15 ounce garbanzo beans drained canned (chickpeas)
  • 12 ounce cherry tomatoes 
  •  chicken breast halves with bones
  • cup cilantro leaves fresh divided chopped
  •  garlic cloves pressed
  • teaspoon ground cumin 
  • 0.3 cup olive oil extra-virgin
  • 0.5 cup greek yogurt plain
  • 0.5 teaspoon pepper dried red crushed
  • tablespoon paprika smoked

Directions

  1. Preheat oven to 450°.
  2. Mix first 5 ingredients in medium bowl.
  3. Pour 1 teaspoon spiced oil mixture into small bowl; whisk in yogurt and set aside for sauce.
  4. Place chicken on large rimmed baking sheet. Rub 2 tablespoons spiced oil mixture over chicken.
  5. Add beans, tomatoes, and 1/2 cup cilantro to remaining spiced oil mixture; toss to coat.
  6. Pour bean mixture around chicken.
  7. Sprinkle everything generously with salt and pepper.
  8. Roast until chicken is cooked through, about 20 minutes.
  9. Sprinkle with 1/2 cup cilantro.
  10. Transfer chicken to plates. Spoon bean mixture over.
  11. Serve with yogurt sauce.
