Ingredients

  •  bay leaves 
  • tablespoon thyme leaves dried
  • cloves garlic sliced
  • 0.5 teaspoon ground pepper black
  • tablespoons juice of lemon 
  • 0.3 cup olive oil 
  •  onions chopped
  • 2.5 pounds roasted 
  • teaspoon salt 
  • 2.5 cups white wine

Directions

  1. Make slits in the roast and insert garlic slices.
  2. Combine in a large plastic bag: wine, lemon juice, olive oil, onions, bay leaves, thyme, salt and pepper.
  3. Add roast and marinate overnight in refrigerator.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. Remove meat from marinade and roast until meat is no longer pink inside and a thermometer reads 145 degrees F (63 degrees C).
