Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • 0.8 teaspoon coarse-ground sea salt 
  •  garlic cloves minced
  • pound pork tenderloin trimmed
  • tablespoon lemon rind grated
  • 0.5 teaspoon olive oil 
  • teaspoon oregano dried

Equipment

  • oven
  • kitchen thermometer
  • aluminum foil
  • broiler pan

Directions

  1. Preheat oven to 45
  2. Combine first 6 ingredients.
  3. Spread mixture evenly over pork.
  4. Place pork on a broiler pan coated with cooking spray. Insert a meat thermometer into thickest part of tenderloin.
  5. Bake, uncovered, at 450 for 25 minutes or until thermometer registers 15
  6. Remove pork from oven, and cover with foil; let stand 10 minutes or until thermometer registers 160.
