Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • 3.5 pound chicken 
  •  garlic clove finely chopped
  • 0.3 cup herbs de provence 
  • tablespoon kosher salt 
  • servings lemon wedges (for serving)
  • 0.3 cup olive oil

Directions

  1. Preheat oven to 475°.
  2. Mix garlic, herbes de Provence, oil, salt, and pepper in a small bowl. Rub mixture all over inside and outside of chicken.
  3. Place on a wire rack set inside a roasting pan.
  4. Roast chicken until skin begins to brown, 25-30 minutes. Reduce heat to 350° and roast until an instant-read thermometer inserted into thigh registers 165°, 25-30 minutes longer.
  5. Let rest 10 minutes before carving.
  6. Serve with lemon wedges.
  7. DO AHEAD: Chicken can be made 2 days ahead.
  8. Let cool. Cover and chill; bring to room temperature before serving.
