  • 10 large vine tomatoes halved
  •  garlic cloves sliced
  • 0.5 bunch thyme leaves 
  • tbsp balsamic vinegar 
  • tbsp olive oil

Directions

  1. Heat oven to 160C/140C fan/gas
  2. Put the tomatoes on a baking sheet with the garlic and thyme, drizzle over the balsamic vinegar and olive oil,
  3. Add some seasoning and roast for 1 hr.
  4. Remove and set aside to cool.
