2 large opal apples cored peeled cut into 1 inch pieces
1 cup apple bbq sauce
2 tablespoons brown sugar
1 chipotle chili in adobo chopped

0.5 cup catsup
2 tablespoons maple syrup
2 teaspoons oil
0.3 cup onion grated
1 pound pork tenderloin sliced into medallions
2 tablespoons soya sauce
1 teaspoon worcestershire sauce

Directions
Toss the apple in the oil and place in a single layer on a baking pan and roast in a preheated 400F oven until they start to caramelize, about 20 minutes.Bring everything to a boil, reduce the heat, simmer for 15 minutes, remove from heat and puree in a blender or food processor.Marinate the pork in the fridge overnight.Grill over medium-high heat until they get a bit charred with grill marks, about 3-5 minutes per side, let sit for a few minutes and enjoy!
