  • 1.5 pounds beets 
  • 0.1 teaspoon pepper black
  • ounce feta cheese crumbled
  • teaspoons parsley fresh chopped
  • tablespoons mayonnaise low-fat
  • tablespoons milk 1% low-fat
  • teaspoons onion red minced
  • cups gourmet salad greens 
  • 0.1 teaspoon salt 
  • 0.3 cup cup heavy whipping cream fat-free sour
  • 1.5 teaspoons citrus champagne vinegar

Directions

  1. Preheat oven to 42
  2. Leave root and 1 inch stem on beets; scrub with a brush.
  3. Place beets on a baking sheet lined with foil.
  4. Bake at 425 for 45 minutes or until tender. Cool the beets slightly. Trim off beet roots; rub off skins. Slice each beet into 8 wedges.
  5. Combine feta cheese and the next 6 ingredients (feta through pepper); stir well with a whisk.
  6. Divide greens evenly among 4 plates, and top with beet wedges. Spoon dressing over salad.
  7. Sprinkle with onion and parsley.
