Ingredients

  •  birds eye chili sliced
  • tablespoons brown sugar 
  • head cauliflower cut into florets
  • teaspoons coriander seeds toasted
  • teaspoons cumin seeds toasted
  • tablespoons fish sauce for vegetarian (or soy sauce )
  • tablespoon galangal grated (or ginger)
  • tablespoon garlic grated
  •  juice of lime (juice and zest)
  • stalks lemongrass peeled chopped
  • tablespoon oil 
  • 0.3 cup satay sauce 
  •  shallots diced finely
  • 0.3 teaspoon turmeric

Directions

  1. Mix the coriander, cumin, turmeric, lemongrass, shallot, garlic, galangal, chili, lime, fish sauce sugar and oil and marinate the cauliflower in the mixture in the fridge for 30 minutes to over night.Arrange the cauliflower in a single layer on a baking sheet, and roast in a preheated 400F oven until lightly golden brown, about 20-30 minutes, flipping in the middle.
