Ingredients

  • 0.3 teaspoon pepper black
  • 1.3 cups couscous uncooked
  • 1.3 cups less-sodium chicken broth fat-free
  • cups corn kernels fresh ( 4 ears)
  •  garlic cloves peeled
  • 0.3 cup green onions chopped
  • tablespoons pimento diced
  • 0.5 teaspoon salt divided
  • 0.5 cup water

Directions

  1. Preheat oven to 42
  2. Wrap garlic in foil.
  3. Place garlic and corn on a jelly-roll pan coated with cooking spray.
  4. Sprinkle 1/4 teaspoon salt over corn.
  5. Bake at 425 for 15 minutes, stirring every 5 minutes. Unwrap garlic, and mince.
  6. Combine garlic, corn, broth, water, 1/4 teaspoon salt, and pepper in a medium saucepan. Bring to a boil; gradually stir in couscous.
  7. Remove from heat; cover and let stand 5 minutes. Fluff with a fork; stir in onions and pimento.
