- 2 medium eggplants diced peeled

- 1 tablespoon juice of lemon
- 0.5 cup olive oil

Directions
- Preheat oven to 45
- Arrange eggplant on an aluminum-foil-lined baking sheet.
- Drizzle olive oil over eggplant, then sprinkle with Knorr Garlic Mini
