  • tablespoons cilantro leaves fresh chopped
  •  garlic cloves unpeeled
  • 0.8 teaspoon kosher salt 
  • 2.5 tablespoons juice of lime fresh
  • medium shallots peeled
  • pound tomatoes

Directions

  1. Preheat broiler to high.
  2. Place chiles, tomatoes, shallots, and garlic cloves on a baking sheet. Broil vegetable mixture for 10 minutes or until charred, turning once after 5 minutes.
  3. Remove chiles from pan.
  4. Place in a paper bag; fold to close tightly.
  5. Let stand 15 minutes.
  6. Remove skins, tops, and seeds from chiles; discard.
  7. Remove skins from garlic; discard.
  8. Place chiles, garlic, tomatoes, shallots, cilantro, lime juice, and kosher salt in the bowl of a food processor; pulse 10 times or until mixture is well combined.
