With a preparation time of just over an hour and a half, this recipe is perfect for busy weeknights or relaxed weekend gatherings, serving up to eight hungry guests with generous portions. The secret lies in the perfect balance of bright citrus and earthy herbs, creating a dish that is both comforting and refreshingly light. Starting with a whole chicken seasoned with a custom blend of garlic powder, black pepper, Italian seasoning, and mustard powder, you will infuse the meat with deep, savory notes from the inside out. The process is simple yet satisfying: rub the spices generously both within the cavity and over the skin to ensure every bite is packed with flavor. Once the chicken is nestled in your baking pan, it is transformed by a zesty drizzle of olive oil mixed with fresh lemon juice, which not only adds a burst of tang but also keeps the meat incredibly moist throughout the roasting process. Basting the bird several times while it bakes in a 350-degree oven ensures a golden, crispy exterior while locking in juiciness. At just 218 calories per serving, this hearty meal is surprisingly wholesome, offering a protein-rich profile that satisfies without feeling heavy. Whether you are planning a family lunch or a delicious dinner, this popular recipe delivers an authentic taste of the Mediterranean with minimal effort. Let the savory herbs and sunny lemon notes work their magic, turning a simple whole chicken into a centerpiece that everyone will be asking for seconds.
