Roasted Oysters with Prosciutto and Spinach

  • ounce baby spinach fresh
  • 0.3 teaspoon pepper black freshly ground
  • tablespoons pinenuts toasted
  • ounce pancetta finely chopped
  • 18  shucked oysters

Directions

  1. Preheat oven to 45
  2. Heat a large nonstick skillet over medium heat.
  3. Add spinach to pan; cook 3 minutes or until spinach is wilted, stirring occasionally.
  4. Add prosciutto to pan; saut 1 minute or until crisp. Stir in pepper.
  5. Remove from heat; cool.
  6. Arrange oysters in a single layer in a broiler pan; spoon about 1 tablespoon spinach mixture onto each oyster.
  7. Sprinkle oysters evenly with pine nuts.
  8. Bake at 450 for 5 minutes or until oysters are opaque.
  9. Serve immediately.
