Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 3.5 pounds bosc pear peeled sliced
  • 0.5 cup brandy 
  • cups dense bread white cubed () ( 8 ounces)
  • cup celery root diced peeled (celery root)
  • 0.5 cup cooking sherry dry
  • large eggs lightly beaten
  • cup less-sodium chicken broth fat-free
  •  garlic cloves minced
  • 0.5 cup hazelnuts toasted chopped
  • teaspoons olive oil 
  • cup onion diced
  • 0.5 teaspoon salt 
  • teaspoons or dried fresh chopped

Directions

  1. Preheat oven to 35
  2. Heat the oil in a large nonstick skillet over medium-high heat.
  3. Add pear slices, and cook, without stirring, 2 minutes or until golden brown. Carefully turn pear slices; cook for 2 minutes or until golden brown.
  4. Add onion, celeriac, and garlic; saute 3 minutes or until lightly browned.
  5. Add sherry and brandy, and cook until liquid almost evaporates.
  6. Remove from heat; cool.
  7. Combine pear mixture, bread, and remaining ingredients in a large bowl, tossing gently. Spoon the bread mixture into a 2-quart casserole. Cover with lid, and bake at 350 for 45 minutes or until thoroughly heated.
