Ingredients

  • pound arugula washed and dried
  • large beets yellow trimmed
  • ounces goat cheese crumbled soft
  • 0.3 cup juice of lemon fresh
  • tablespoons olive oil divided
  • 0.3 cup pinenuts toasted
  • large beets red trimmed
  • servings salt and pepper black freshly ground
  • tablespoon tarragon leaves finely chopped

Directions

  1. Preheat grill. Rub beets with 2 tablespoons of the olive oil and wrap separately in aluminum foil.
  2. Place on the grill over medium heat and let cook for 1 hour or until tender.
  3. Remove from foil and let cool slightly. Peel and cut into 1-inch pieces.
  4. Whisk together the olive oil, lemon juice and tarragon and season with salt and pepper.
  5. Arrange the arugula on a platter, top with beets and goat cheese and drizzle with lemon vinaigrette.
  6. Sprinkle with pine nuts.
