- 0.5 cup cilantro leaves fresh chopped
- 1 pound green beans fresh trimmed
- 1 teaspoon ground cumin
- 4 cups mushrooms sliced
- 1 tablespoon olive oil
- 1 teaspoon pepper
- 0.5 cup red wine vinegar
- 24 ounce roasted bell peppers red drained cut into 3-inch strips
- 0.3 teaspoon salt

- Combine first 6 ingredients in a large bowl. Stir well; set aside.
- Steam beans, covered, 3 minutes or until tender.
- Drain and rinse under cold water; drain well.
