Ingredients

  • 0.5 cup cilantro leaves fresh chopped
  • pound green beans fresh trimmed
  • teaspoon ground cumin 
  • cups mushrooms sliced
  • tablespoon olive oil 
  • teaspoon pepper 
  • 0.5 cup red wine vinegar 
  • 24 ounce roasted bell peppers red drained cut into 3-inch strips
  • 0.3 teaspoon salt

Directions

  1. Combine first 6 ingredients in a large bowl. Stir well; set aside.
  2. Steam beans, covered, 3 minutes or until tender.
  3. Drain and rinse under cold water; drain well.
  4. Add beans and remaining ingredients to bowl; toss gently to coat. Cover and marinate in refrigerator up to 24 hours.
  5. Serve with a slotted spoon.
