Ingredients

  • tablespoon balsamic vinegar 
  • 0.3 teaspoon pepper black freshly ground
  • teaspoon thyme leaves fresh chopped
  •  garlic clove minced
  • tablespoons olive oil divided
  • pounds plum tomatoes halved lengthwise seeded
  • 0.3 teaspoon salt 
  • large shallots peeled
  • 0.5 teaspoon sugar

Directions

  1. Preheat oven to 35
  2. Place the tomatoes, cut sides down, on a foil-lined baking sheet.
  3. Brush with 1 tablespoon oil; sprinkle with pepper.
  4. Bake at 350 for 50 minutes. Wrap shallots in foil; add to baking sheet.
  5. Bake an additional 40 minutes or until tomatoes are lightly charred and shallots are soft. Cool 10 minutes.
  6. Chop tomatoes and shallots; place in a medium bowl.
  7. Add remaining 1 tablespoon oil, vinegar, and remaining ingredients to bowl; toss well.
