Ingredients

  • tablespoons balsamic vinegar 
  • 0.3 teaspoon pepper red crushed
  •  garlic cloves unpeeled
  • 0.3 teaspoon ground pepper black
  • tablespoon olive oil 
  • teaspoon oregano leaves fresh
  • small onions red unpeeled cut in half horizontally
  • 0.5 teaspoon salt 
  • teaspoon sugar 
  • tablespoon tomato paste 
  • pounds tomatoes cored ( 6)

Directions

  1. Preheat broiler.
  2. Place garlic and onions, skin sides up, on a jelly roll pan.
  3. Place pan on lower oven rack. Broil 30 minutes.
  4. Add tomatoes to pan, core sides down. Cook an additional 30 minutes or until blackened. Cool 5 minutes.
  5. Remove skins from garlic, onion, and tomatoes; discard skins.
  6. Place garlic, onion, and tomatoes in a food processor.
  7. Add vinegar and remaining ingredients; process until smooth.
