Ingredients
- 2 tablespoons basil fresh chopped
- 1 tablespoon parsley fresh chopped
- 1 teaspoon rosemary fresh chopped
- 2 teaspoons thyme leaves fresh chopped
- 2 tablespoons garlic minced
- 4 tablespoons olive oil
- 2 teaspoons oregano fresh chopped
- 8 servings salt and pepper
- 2 tablespoons shallots chopped
- 3 tomatoes red halved
- 3 tomatoes yellow halved

Directions
- Sprinkle tomatoes with salt and place, cut side down, on a paper towellined plate.
- Let stand 30 minutes to drain.
- Preheat oven to 425F. Mist a baking dish with cooking spray, then arrange tomato halves, cut side up, in a single layer in dish.
- In a small bowl, combine herbs, shallot and garlic.
- Add pepper, to taste.
- Spread herb mixture evenly over tomatoes.
- Drizzle with oil.
- Bake in oven until cooked through, about 20 minutes.
- Remove dish from oven, top with fresh basil and serve.
