Ingredients

  • tablespoons basil fresh chopped
  • tablespoon parsley fresh chopped
  • teaspoon rosemary fresh chopped
  • teaspoons thyme leaves fresh chopped
  • tablespoons garlic minced
  • tablespoons olive oil 
  • teaspoons oregano fresh chopped
  • servings salt and pepper 
  • tablespoons shallots chopped
  •  tomatoes red halved
  •  tomatoes yellow halved

Directions

  1. Sprinkle tomatoes with salt and place, cut side down, on a paper towellined plate.
  2. Let stand 30 minutes to drain.
  3. Preheat oven to 425F. Mist a baking dish with cooking spray, then arrange tomato halves, cut side up, in a single layer in dish.
  4. In a small bowl, combine herbs, shallot and garlic.
  5. Add pepper, to taste.
  6. Spread herb mixture evenly over tomatoes.
  7. Drizzle with oil.
  8. Bake in oven until cooked through, about 20 minutes.
  9. Remove dish from oven, top with fresh basil and serve.
