  • 0.3 teaspoon pepper black freshly ground
  • tablespoon flat-leaf parsley fresh chopped
  • teaspoons olive oil 
  • 0.5 teaspoon salt divided
  • 0.3 cup shallots minced
  • medium tomatoes cut in half horizontally ( 2 pounds)
  • 0.5 teaspoon or dried fresh chopped
  • teaspoon or dried fresh chopped
  • teaspoon or dried fresh chopped
  • teaspoon or dried fresh chopped

Directions

  1. Preheat oven to 35
  2. Core and seed tomato halves.
  3. Sprinkle cut sides of tomato halves with 1/4 teaspoon salt.
  4. Place tomato halves, cut sides down, on paper towels.
  5. Let stand 20 minutes.
  6. Place tomato halves, cut sides up, in a 13 x 9-inch baking dish coated with cooking spray.
  7. Sprinkle with 1/4 teaspoon salt, shallot, and next 5 ingredients (shallot through pepper).
  8. Drizzle with oil.
  9. Bake at 350 for 1 hour and 15 minutes or until tomatoes soften.
