Ingredients

  • 0.8 teaspoon pepper black freshly ground
  • cup feta crumbled
  • 0.5 cup parsley fresh chopped
  • tablespoons garlic minced
  • 0.8 teaspoon kosher salt 
  • tablespoons juice of lemon 
  • tablespoons olive oil 
  • 1.5 pound shrimp deveined peeled
  • large tomatoes cut into eighths

Equipment

Directions

  1. Preheat oven to 450F.
  2. Place the tomatoes in a large baking dish. Spoon the olive oil and garlic over the tomatoes.
  3. Sprinkle with the salt and pepper and toss.
  4. Place on top rack of oven and roast for 20 minutes.
  5. Remove baking dish from oven and stir in the shrimp, parsley, and lemon juice.
  6. Sprinkle with the Feta.
  7. Place back in oven for another 10 to 15 minutes or until the shrimp are cooked.
  8. Serve warm with crusty bread.
