Ingredients

  • tablespoons almond flour 
  • 0.5 teaspoon pepper black freshly ground
  • 0.5 cup yogurt cheese 
  • tablespoon ginger fresh grated peeled
  • teaspoon juice of lemon fresh
  • tablespoons milk 2% reduced-fat
  • 0.5 teaspoon saffron threads crushed
  • teaspoon salt 
  • pounds chicken breast boneless skinless cut into 1 1/2-inch pieces

Directions

  1. Prepare grill.
  2. Combine milk and saffron in a small microwave-safe bowl, and microwave at high 20 seconds.
  3. Let stand 5 minutes.
  4. Combine the milk mixture, Yogurt Cheese, and next 5 ingredients (through pepper) in a large zip-top plastic bag.
  5. Add chicken, tossing to coat; seal. Marinate in refrigerator 2 1/2 hours, turning occasionally.
  6. Remove chicken from bag, and discard marinade. Divide chicken evenly onto each of 20 (6-inch) skewers.
  7. Place skewers on grill rack coated with cooking spray; grill 15 minutes or until cooked through, turning once.
