Ingredients

  • 1.3 cups bell pepper strips red yellow
  • 1.8 cups cucumber peeled sliced
  • 0.5 teaspoon garlic powder 
  • cups torn leaf lettuce red ( 1 head)
  • teaspoons olive oil extra-virgin
  • teaspoon oregano dried
  • 0.3 teaspoon pepper freshly ground
  • cup onion red sliced
  • 0.3 cup red wine vinegar 
  • 0.3 teaspoon salt 
  • 1.5 cups tomatoes divided chopped

Directions

  1. Combine first 4 ingredients in a large bowl; toss gently.
  2. Place 3/4 cup chopped tomato in a blender; process until smooth. Press pured tomato through a sieve over a bowl, using back of a spoon; reserve tomato juice, and discard solids.
  3. Add remaining 3/4 cup chopped tomato, vinegar, and remaining 5 ingredients to reserved tomato juice in bowl; stir until well blended.
  4. Pour dressing over salad, tossing gently to coat.
