- 0.3 cup celery diced
- 1 tablespoons tarragon fresh chopped
- 3 tablespoons green onions finely chopped
- 2 tablespoons juice of lemon fresh
- 1.5 teaspoons lemon rind grated
- 0.5 cup mayonnaise
- 0.3 cup bell pepper diced red
- 12 ounce salmon fillet
- 0.5 teaspoon salt
- 0.5 cup cup heavy whipping cream sour

- Pour water to a depth of 2 inches into a large skillet; bring to a boil.
- Add fish, and return to a boil. Cover, reduce heat. and simmer 5 to 8 minutes or until fish flakes with a fork.
- Remove from skillet with a slotted spoon; cool slightly. Flake into bite-size pieces.
- Stir together fish and remaining ingredients. Cover and chill 1 to 2 hours.
