  • 0.5 teaspoon pepper black freshly ground
  • tablespoons capers drained
  • cup small-diced celery (3 stalks)
  • tablespoons optional: dill fresh minced
  • 0.5 teaspoon kosher salt 
  • tablespoons olive oil good
  • 0.5 cup small-diced onion red (1 small onion)
  • tablespoons raspberry vinegar 
  • pounds salmon chilled cooked

Directions

  1. Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl.
  2. Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt, and pepper. Season, to taste.
  3. Mix well and serve cold or at room temperature.
