Ingredients

  • tablespoons butter 
  • tablespoons parsley fresh chopped
  •  garlic cloves minced
  • slices garnish: lime 
  • tablespoons juice of lime fresh
  • small onion chopped
  • 0.3 teaspoon pepper 
  • ounce salmon fillet 
  • 0.3 teaspoon salt 
  • 0.3 cup slivered almonds toasted

Equipment

  • frying pan
  • aluminum foil
  • spatula
  • broiler pan

Directions

  1. Sprinkle fish evenly with salt and pepper. Set aside.
  2. Melt butter in a large, heavy skillet over medium-high heat.
  3. Add onion, and saut 8 minutes or until onion is tender.
  4. Add garlic, and saut 2 to 3 minutes. Stir in lime juice.
  5. Remove from heat.
  6. Arrange fish, skin side down, on a lightly greased rack in an aluminum foil-lined broiler pan. Broil, 5 inches from heat, 7 to 10 minutes or until fish flakes with a fork. Using a wide metal spatula, lift fish from skin, leaving skin on rack.
  7. Transfer to a serving dish. Top with onion mixture; sprinkle evenly with toasted almonds and parsley.
  8. Garnish, if desired.
