  • 0.3 teaspoon pepper black freshly ground
  • cup cucumber seeded chopped
  • tablespoons mint leaves fresh chopped
  • medium jalapeño seeded finely chopped
  • tablespoons juice of lime fresh
  • tablespoons juice of lime fresh
  • tablespoons onion red finely chopped
  • 24 ounce salmon fillet 
  • 0.1 teaspoon salt 
  • 0.5 teaspoon salt 
  • tablespoon sugar

Directions

  1. Preheat broiler.
  2. Combine first 7 ingredients in a small bowl. Cover and chill.
  3. Place fillets on rack of a broiler pan coated with cooking spray.
  4. Drizzle with 2 tablespoons lime juice; sprinkle with 1/2 teaspoon salt and pepper. Broil 12 minutes or until fish flakes easily when tested with a fork.
  5. Serve salmon with cucumber mixture.
