Ingredients

  • 31 ounce .5 can cannellini beans rinsed drained canned
  • servings garnish: cilantro sprigs fresh
  •  garlic cloves 
  •  green onions cut into 1 1/2-inch pieces
  • 0.5 teaspoon ground cumin 
  • 0.3 cup juice of lemon 
  • 0.3 cup mayonnaise 
  • 0.5 cup salsa 
  • 0.5 teaspoon salt

Directions

  1. Process first 4 ingredients in a food processor until coarsely chopped.
  2. Add beans, mayonnaise, and lemon juice, and process until smooth, stopping to scrape down sides. Spoon into a shallow 9-inch round baking dish.
  3. Process salsa in food processor until smooth, stopping to scrape down sides. Spoon into center of bean mixture. Pull the point of a wooden pick through salsa toward edge of dish to create a starburst design.
  4. Serve chilled or at room temperature with tortilla chips.
  5. Garnish, if desired.
  6. Note: We preferred hot salsa.
