Ingredients

  • tablespoon bottled garlic minced
  • 45 ounce black beans rinsed drained canned
  • 0.5 teaspoon chipotle chile powder 
  • 0.5 cup cilantro leaves fresh chopped
  • tablespoon juice of lime fresh
  • ounces monterrey jack cheese shredded
  • ounce salsa 
  • teaspoon vegetable oil 
  • cups water

Directions

  1. Heat oil in a large saucepan over medium-high heat.
  2. Add garlic; saut 1 minute. Stir in water, chipotle powder, beans, and salsa. Bring to a boil; reduce heat, and simmer 1 minute.
  3. Place 3 cups of black bean mixture in a blender; process until smooth. Return pureed mixture to pan. Stir in lime juice; simmer 10 minutes.
  4. Remove from heat; stir in cilantro.
  5. Sprinkle each serving with cheese.
