  • 0.1 teaspoon pepper black
  • teaspoon butter 
  • large egg whites 
  • large eggs 
  • 0.5 teaspoon cilantro leaves fresh finely chopped
  • tablespoons milk 1% low-fat
  • tablespoons bottled roasted bell pepper red chopped
  • tablespoons salsa 
  • 0.3 teaspoon salt 
  • ounce pre-shredded cheddar cheese reduced-fat

Directions

  1. Combine first 5 ingredients in a bowl, stirring with a whisk. Stir in roasted red pepper.
  2. Melt butter in an 8-inch nonstick skillet over medium heat.
  3. Add egg mixture, and cook 3 to 5 minutes or until set (do not stir).
  4. Sprinkle with cheese. Loosen omelet with spatula; fold in half. Slide omelet onto a plate.
  5. Top with salsa, and sprinkle with cilantro.
