Ingredients

  • oz chiles green chopped canned
  • 16 oz navy beans drained and rinsed canned
  • teaspoons chili powder 
  • servings toppings: cilantro 
  • cups original corn chips 
  • cups kernel corn whole yellow frozen thawed
  • teaspoon ground cumin 
  • tablespoons juice of lime fresh
  • teaspoons olive oil divided
  • oz pepper jack cheese shredded
  • oz garlic pork sausage links 
  • 16 oz salsa verde 
  • medium size onion sweet chopped

  • paper towels

Directions

  1. Saut corn in 3 tsp. hot olive oil in a large skillet over medium heat 3 to 4 minutes or until corn begins to char.
  2. Remove corn from skillet.
  3. Saut sausage in skillet over medium-high heat 6 to 8 minutes or until browned.
  4. Remove from skillet, and drain on paper towels.
  5. Saut onion in remaining 2 tsp. hot oil in skillet over medium-high heat 4 to 5 minutes or until tender. Stir in chili powder and cumin; cook, stirring often, 2 to 3 minutes. Stir in salsa, chiles, and sausage. Cook over medium heat, stirring often, 7 to 8 minutes or until slightly thickened.
  6. Remove from heat; stir in beans, lime juice, and corn.
  7. Divide chips among 6 plates. Spoon sausage mixture over chips; top with half of cheese.
  8. Serve with toppings and remaining cheese.
