Looking for a dish that's both comforting and flavorful? Salt Cod in Tomato Garlic Confit is the perfect choice for a delightful lunch or dinner! This dish combines the rich, savory flavor of salt cod with the irresistible depth of a garlic-infused tomato confit. The slow-cooked garlic in olive oil creates a golden, fragrant base that perfectly complements the delicate flakes of the cod. Each bite of the fish is topped with a creamy mayonnaise and crème fraîche mixture, which is broiled until lightly browned, adding a luxurious texture and flavor.

Whether you're cooking for a special occasion or just want to impress your family, this dish makes a beautiful presentation and satisfies even the most discerning palates. The recipe is simple, but the result is a truly gourmet experience. With its mix of rich flavors and textures, this dish will transport you to a cozy Mediterranean kitchen. The best part? It's gluten-free, making it an excellent choice for guests with dietary restrictions.

While the recipe takes some time, the wait is well worth it. The salt cod requires a bit of soaking to remove excess salt, but once prepared, the confit can be made ahead, saving you time on the day of serving. This dish is a wonderful main course for a dinner party or a cozy meal for your loved ones, making it a versatile and impressive addition to your culinary repertoire.

Ingredients

  • 56 ounce tomatoes diced drained canned
  • 0.3 cup crème fraîche
  • large garlic clove peeled
  • tablespoons mayonnaise
  • 0.3 cup olive oil extra virgin extra-virgin
  • pound cod boneless skinless rinsed cut into 1 1/2-inch pieces well (bacalao)
  • 0.3 teaspoon sugar
  • tablespoon water

Equipment

  • bowl
  • frying pan
  • paper towels
  • sauce pan
  • whisk
  • baking pan
  • broiler
  • spatula

Directions

  1. Cover cod with 2 inches of cold water in a large bowl and soak, chilled, changing water 3 times a day, up to 3 days (see cooks' note, below).
  2. Drain cod and transfer to a 3-quart saucepan, then add 6 cups water. Bring just to a simmer and remove from heat. (Cod will just begin to flake; do not boil or it will become tough.) Gently transfer cod with a slotted spatula to a paper-towel-lined plate to drain. Cover with a dampened paper towel and chill while making confit.
  3. Cook garlic in oil in a 12-inch heavy skillet over moderately low heat, turning occasionally, until golden, 10 to 15 minutes.
  4. Add tomatoes and sugar and cook, stirring frequently, until tomatoes break down into a very thick sauce and oil separates, 45 minutes to 1 hour.
  5. Mash garlic cloves into sauce and add salt and pepper to taste.
  6. Spread sauce in a 3-quart gratin dish or other flameproof shallow baking dish and arrange fish over sauce.
  7. Preheat broiler.
  8. Whisk together mayonnaise, crème fraîche, and water and spread over each piece of fish. Broil fish 5 to 6 inches from heat just until mayonnaise mixture is lightly browned, about 2 minutes.
  9. • Brands of salt cod differ in their degree of saltiness: A less salty variety may need only 1 day of soaking, while another could require up to
  10. To test it, simply taste a small piece after 1 day; you want it to be pleasantly salty but not overwhelming.• Confit can be made 2 days ahead and cooled, uncovered, then chilled, covered. Reheat before using.
