2 pound sauerkraut drained

Combine sauerkraut, gin, and carawayseeds in heavy large saucepan. Bring tosimmer over medium heat. Reduce heat tomedium-low and simmer gently, uncovered,until gin is reduced by slightly more thanhalf, stirring occasionally (sauerkraut willstill be crunchy and gin and caraway flavorswill be absorbed), about 30 minutes.
