Ingredients

  • lb sausage meat italian
  • 0.5 cup butter melted
  •  eggs beaten
  • oz mushrooms fresh sliced (3 cups)
  • 18 oz spinach frozen thawed drained chopped
  • 1.3 cups milk 
  • cup onion coarsely chopped
  • 0.5 cup parmesan cheese grated
  • oz mozzarella cheese shredded
  • 1.5 cups bell pepper red coarsely chopped
  • 1.5 cups self raising flour 
  • tablespoon vegetable oil

Directions

  1. Heat oven to 400F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 12-inch skillet, cook sausage over medium-high heat 8 minutes, stirring frequently, until browned.
  2. Remove from skillet; drain.
  3. In same skillet, heat oil over medium-high heat.
  4. Add onion and bell pepper; cook 5 minutes, stirring occasionally.
  5. Add mushrooms; cook and stir 3 minutes or until vegetables are tender. Stir in spinach and cooked sausage.
  6. Pour into baking dish.
  7. Sprinkle with cheese.
  8. In medium bowl, beat topping ingredients with wire whisk until smooth.
  9. Pour over filling in baking dish.
  10. Bake 35 to 40 minutes or until topping is golden brown.
