Ingredients

  • 0.5 teaspoon pepper black divided
  • serving chives chopped
  • 1.5 pounds fingerling potatoes 
  • serving lime 
  • tablespoon olive oil 
  • 0.8 teaspoon salt divided
  • ounces sausage smoked finely chopped
  • ounces sharp cheddar cheese finely grated

Directions

  1. Preheat oven to 37
  2. Toss potatoes in olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper on a rimmed baking sheet.
  3. Bake 25 minutes or until tender.
  4. Let stand until cool enough to handle.
  5. Meanwhile, cook sausage in a nonstick skillet over medium-high heat until brown.
  6. Drain on paper towels.
  7. Cut potatoes in half lengthwise. Carefully scoop out pulp, leaving shells intact.
  8. Combine potato pulp, sausage, and cheese in a bowl. Season with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper.
  9. Spoon about 1 heaping teaspoon potato mixture into each potato shell. Arrange on a lightly greased baking sheet.
  10. Bake 15 minutes or until heated through.
  11. Serve with Chipotle-Lime Guacamole.
  12. Garnish potatoes, if desired.
