  2. Heat a small skillet coated with cooking spray over medium heat.
  3. Add pork; cook 4 minutes on each side or until done.
  4. Add juice and vinegar; simmer 3 minutes, turning pork occasionally.
  5. Serve warm with relish and fritters.
