Ingredients

  • 0.3 teaspoon pepper black divided freshly ground
  • pound broccoli rabe trimmed coarsely chopped
  • tablespoon garlic minced
  • cups grapes green sliced in half lengthwise
  • 0.3 teaspoon kosher salt divided
  • tablespoons olive oil divided
  • 0.3 cup parmesan cheese shaved
  • ounce pork sausage italian
  • cup onion red thinly sliced
  • teaspoon red wine vinegar 
  • 0.3 cup white wine

Directions

  1. Cook broccoli rabe in boiling water 1 1/2 minutes; drain and rinse with cold water.
  2. Drain well.
  3. Place in a large bowl. Set aside.
  4. Heat a large skillet over medium-high heat.
  5. Add 1 tablespoon olive oil to pan; swirl to coat.
  6. Add sausage; cook for 6 minutes or until browned, stirring to crumble.
  7. Add grapes, 1/8 teaspoon salt, and 1/8 teaspoon pepper; cook for 2 minutes or until grapes begin to soften.
  8. Add sausage mixture to broccoli rabe.
  9. Return pan to medium-high heat.
  10. Add remaining 1 tablespoon oil to pan; swirl to coat.
  11. Add onion; cook 2 minutes or until soft.
  12. Add garlic; cook 30 seconds or until fragrant.
  13. Add wine; cook 2 minutes or until liquid almost evaporates.
  14. Add remaining 1/8 teaspoon salt, remaining 1/8 teaspoon pepper, sausage mixture, and vinegar. Toss to combine; cook 1 minute or until thoroughly heated.
  15. Sprinkle with cheese; serve immediately.
