Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 0.5 teaspoon basil leaves dried
  • tablespoons parsley fresh chopped
  •  garlic clove minced
  • tablespoon butter light
  • tablespoon olive oil 
  • 0.5 teaspoon salt 
  • pound sea scallops 
  • cup tomatoes seeded chopped ( 1 large)

Directions

  1. Combine first 6 ingredients in a small bowl. Set aside.
  2. Heat oil and butter in a large nonstick skillet over medium-high heat.
  3. Add scallops, and cook 2 minutes on each side.
  4. Add tomato mixture to pan, and cook 1 minute, stirring gently, until thoroughly heated.
  5. Serve immediately with lemon wedges, if desired.
