  •  bay leaf crushed
  • cups celery chopped
  • cup crab meat 
  • 0.5 teaspoon thyme leaves dried
  • tablespoons filé powder 
  • cups fish stock 
  • teaspoon garlic minced
  • cups bell pepper green chopped
  • 0.5 teaspoon ground pepper 
  • 0.5 teaspoon ground pepper black
  • 0.5 teaspoon ground pepper white
  • cups onion chopped
  • 0.5 teaspoon oregano dried
  • 1.5 teaspoons paprika 
  • teaspoons pepper sauce hot
  • teaspoon salt 
  • pound shrimp - and deveined peeled for stock
  • cups shucked oysters 
  • 1.5 cups tomato sauce 
  • 0.8 cup vegetable oil

Directions

  1. Combine the red, white, and black peppers, paprika, thyme, oregano, bay leaf, and salt; set aside.
  2. In a heavy pot, 5 quart or larger, heat oil over medium heat, warming the pot first.
  3. Add onions, celery, and green pepper. Turn heat to high. Stirring frequently, add garlic, file, hot sauce, and the pepper-herb mixture. Cook for 5 minutes, stirring constantly.
  4. Add tomato sauce, and stir as it reduces over high heat.
  5. Add fish stock and bring to a boil. Reduce heat, and simmer for 1 hour, stirring occasionally.
  6. When ready to serve, add shrimp, oysters, and crabmeat. Cover, and wait 5 minutes. Turn off heat, and let stand for 10 minutes.
  7. Serve.
