  • 5-inch corn tortillas ()
  • teaspoons cumin seeds 
  • 0.5 cup cilantro leaves fresh chopped
  • teaspoon garlic powder 
  • 1.5 cups lettuce shredded
  • tablespoons juice of lime fresh
  • 0.5 cup cup heavy whipping cream sour reduced-fat
  • teaspoon onion powder 
  • 0.3 teaspoon salt 
  • 1.3 pounds shrimp deveined peeled
  • 0.5 cup tomatillo salsa 
  • 0.5 cup tomatoes diced

Directions

  1. Combine first 6 ingredients in a large bowl.
  2. Add shrimp; toss to coat. In a separate bowl, toss together lettuce, cilantro, and lime juice; cover and chill.
  3. Heat a cast-iron grill pan or skillet over medium-high heat. Coat pan with cooking spray; add shrimp, and cook 3 to 4 minutes per side or until shrimp are done.
  4. Warm tortillas according to package directions.
  5. Divide shrimp evenly among tortillas. Top each tortilla with 1/4 cup lettuce mixture, 1 tablespoon diced tomato, 1 tablespoon tomatillo salsa, and 1 tablespoon sour cream; fold tortillas in half.
