  • 0.3 teaspoon pepper black freshly ground
  • tablespoons flat-leaf parsley fresh chopped
  • teaspoon thyme leaves fresh chopped
  • tablespoons juice of lemon fresh
  • teaspoon lemon rind grated
  •  lemon wedges 
  • tablespoon olive oil extra-virgin divided
  • teaspoons olive oil extra-virgin
  • 0.3 teaspoon salt 
  • 1.5 pounds sea scallops 
  • 0.3 cup shallots finely chopped
  • cups watercress trimmed

Directions

  1. To prepare relish, combine first 8 ingredients in a bowl; toss well.
  2. To prepare scallops, heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat.
  3. Sprinkle scallops with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. Add half of scallops to pan; cook 2 minutes on each side or until done. Repeat procedure with remaining oil and scallops. Arrange scallops over watercress; top with relish.
  5. Serve with lemon wedges.
