Ingredients

  • tablespoons avocado ripe peeled chopped
  • teaspoon chipotles in adobo canned minced
  • tablespoon sherry dry
  • tablespoons basil fresh chopped
  •  garlic minced
  • 0.3 cup spring onion chopped
  • 0.5 teaspoon cumin 
  • teaspoons juice of lemon fresh
  • tablespoon soy sauce low-sodium
  • teaspoons olive oil 
  • 1.5 cups pineapple fresh finely chopped
  • 0.5 teaspoon salt divided
  • 1.5 pounds shrimp unpeeled
  • 0.5 teaspoon sugar 
  • 0.5 cup tomatoes finely chopped

Directions

  1. Combine first 8 ingredients (through sugar) in a medium bowl; stir in 1/4 teaspoon salt. Cover and chill.
  2. Peel and devein shrimp, leaving tails intact.
  3. Combine shrimp, sherry, and next 3 ingredients (through garlic) in a large zip-top plastic bag; seal and shake to coat shrimp. Marinate in refrigerator 30 minutes.
  4. Heat oil in a large nonstick skillet over medium-high heat.
  5. Remove shrimp from bag; discard marinade.
  6. Add shrimp to pan; sprinkle with remaining 1/4 teaspoon salt. Cook 2 minutes on each side or until shrimp are done. Spoon 1/3 cup salsa into each of 6 martini glasses; place 5 shrimp on rim of each glass.
  7. Garnish each glass with a lime wedge, if desired.
