  • 16 ounce beef tenderloin steaks 
  • 0.5 teaspoon pepper black freshly ground
  • tablespoon butter 
  • 0.8 cup wine dry red
  • servings green beans 
  • tablespoon olive oil 
  • servings potatoes smashed
  • 0.5 teaspoon salt 
  • 0.5 cup shallots finely chopped
  •  star anise 
  • cup cherries sweet pitted halved (such as Bing)

Directions

  1. Preheat oven to 42
  2. Heat a large cast-iron skillet over high heat.
  3. Sprinkle steaks evenly with salt and pepper.
  4. Add oil to pan; swirl to coat.
  5. Add steaks; cook 4 minutes. Turn steaks over; bake at 425 for 5 minutes or until desired degree of doneness.
  6. Remove steaks from pan.
  7. Heat skillet over medium-high heat.
  8. Add shallots; saut 2 minutes or until just tender, stirring frequently.
  9. Add cherries and star anise; cook 1 minute.
  10. Add wine, bring to a boil, and cook 3 minutes or until slightly thickened. Discard star anise. Stir in butter. Spoon sauce over steaks.
