Ingredients

  • pound bay scallops 
  • 0.3 teaspoon pepper black
  • tablespoons cooking wine dry white
  • large eggs 
  • 0.8 cup milk fat-free
  • 0.5 cup basil fresh thinly sliced
  • teaspoons ginger fresh minced peeled
  • tablespoon olive oil 
  • 0.8 cup onion chopped
  • cups seashell pasta uncooked
  • 0.5 teaspoon salt 
  • 0.8 pound snow peas trimmed cut in half

Directions

  1. Cook pasta in boiling water 5 minutes.
  2. Add snow peas; cook 2 minutes or until tender.
  3. Drain.
  4. While pasta cooks, heat oil in a large skillet over medium heat.
  5. Add onion; saut 4 minutes or until tender.
  6. Add ginger; saut 1 minute.
  7. Add scallops and wine; cook 3 minutes or until scallops are almost done.
  8. Combine milk and egg in a small bowl; stir well with a whisk.
  9. Add pasta mixture and milk mixture to pan; stir well. Cook over low heat 5 minutes or until milk mixture is slightly thick, stirring constantly (do not boil). Stir in the basil, salt, and pepper.
  10. Serve immediately.
